Make Your Own Sio Bak!

Damn if I knew the real recipe…
Ok this is not THE sio bak but roast pork’s translation in hokkien is ’sio bak’ waaaaat…..
Guess you guys know by now, the rule of thumb is simple. Whatever I can find in the fridge and kitchen cupboard.
1)Two slabs of beautiful pork belly.
2) Hoisin Sauce
3)Teriyaki Sauce
4)Dried Rosemary
5) Peppercorn
6) Large Onions (sliced)
7) Ginger (sliced)
Massage pork belly with Hoisin sauce and a touch of Teriyaki sauce. Both sauces can be quite sweet so use more if you like it sweet and less if you don’t. Add rosemary and peppercorn.
Once again I had to whip this dinner up fast so there was no time to marinate for too long (as in more than 4 hours or overnight) I used the time I needed to cut the onions, ginger plus heating up the oven.
Don’t ask me about how long to heat up oven, erm… say.. 20min on high? Our oven says 0 – 10, I’m not an expert so I just turned it to 10 and did all the above.
Place pork belly side by side in a baking pan lined with aluminium foil. Throw in onions and place ginger slices on top of the pork.
Roast in oven until the smell makes you hungry. That means one side is cooked. Turn pork. Remove from oven when you think the other side is cooked. I had to turn the pork belly a few times.. I’ve never done this before.
Cut into small pieces, now you can really see if it’s really cooked.

Best served with piping hot rice. At a table with someone you love.
